Carrot Cake for Breakfast? Recipe Inside!

Anyone else struggle to get their little ones to eat veggies?! Now we are in the 'threenanger' stage, and I must add, what a breeze this is, I don’t even attempt the fight, I just hide the veggies! How does that story about the white lie go again?!

This jar full was a breakfast of overnight oats in this house – absolutely devoured! No fights, no arguments and I even got a ‘licious’ comment from the threenanger.

Kids or no kids, this baby is a winner to cram in veggies and use up some of those carrots lurking in the bottom of the fridge! 3 minute breakfast right here.

Carrot Cake Overnight Oats


1 cup rolled oats

1 large carrot grated

2 tbsp chia seeds

2 tbsp sunflower seeds

2 tbsp raisins

2 tsp maca powder *optional

1 tsp cinnamon

½ tsp nutmeg *optional

1½ cup of oat milk


Pop everything into a large jar and shake what ya momma gave ya! Quick tip – so the chia seeds don’t stick together (or anything else for that matter) let it stand for 5 minutes and shake it again.
