In need of Christmas Pudding Balls?!

Well - the title was an interesting one! Hope it made you smile or even laugh out loud (yes I refuse to use LOL, at 34 I think it'd be frowned upon).

I'll cut straight to the chase - you need a Christmas treat to put on the table and I have a recipe! As I bang on about in all of my blog post, I am all about health alternative and choices, never ever deprivation. So if you fancy something sweet, you should have it. That little craving is a message from your body saying something isn't quite right, I need....maybe energy, or a warm feeling, or a kick of dopamine....for whatever reason it is, that is yours to decipher.

INGREDIENTS BASE

  • 1 cup Dates (pitted & fresh)
  • 4/3 cup Roasted Almonds & Hazelnuts mixed
  • 1 heaped tbsp Cacao powder
  • 1 tbsp Coconut oil
  • 2 tbsp Goji Berries (plus extra for decoration)
  • 2 tsp Cinnamon
  • 1 tsp Mixed Spice
  • 1 tsp Maca Powder
  • 2 tbsp Sunflower Seeds

INGREDIENTS TOPPING

  • 1 Coconut Cream Can
  • 1 tsp Vanilla powder (optional)

INSTRUCTIONS (BASE):

  • Blitz up the nuts first to very small/fine chunks.
  • And then add the rest of the ingredients and blitz up a little more (if it struggles to bind here you can add an extra tbsp of water or two).
  • Pop into the fridge to harden up whilst you make the topping.

INSTRUCTIONS (TOPPING):

  • Open the can of coconut cream and without shaking or mixing scrap off the hard coconut top. (Leave the liquid at the bottom in the can).
  • With a fork, whip together the vanilla and coconut cream.
  • Dollop a spoonful on top of each ball and decorate with goji's!

And that is literally it - you've made some delicious Christmas treats that are crazy healthy, made with all nautral ingredients and PACKED full of nutrients.
