Looking for a sweet way to reduce inflammation?

Who knew inflammation in the body could be helped with this delicious treat?! Inflammation in the body is often the underlying cause of headaches, IBS, anxiety, fatigue, brain fog to name a few.
By reducing the inflammation in the cells you can start to prevent these low level symptoms becoming more severe.
Basically, the answer is...delicious coconut bars!

⭐️Coconut Lemon Bars⭐️
Crust
❤️1.5 cups oats
❤️1/4 cup shredded unsweetened coconut
❤️1/2 cup coconut oil
❤️1 tbsp maple syrup
❤️1 cup Flour blend (1 cup brown rice flour, 1 cup white rice flour 3 cups tapioca starch) OR 1 cup oat flour
Frosting
❤️2 cups coconut cream (refrigerated for 24 hours)
❤️Juice of 1 lemon
❤️3 tablespoons maple syrup

Instructions:
Crust - Blend oats and coconut together, then add the oil, syrup and flour. Pulse until it forms a ball. Press into an 8x8 tin and bake for max 15 minutes on 180 degrees. Leave to cool completely.
Frosting - put the coconut cream solids (no liquid from the cans, only scoop out the hard coconut when you open), lemon juice and maple syrup in a bowl and whip until fluffy. Spread on top of the crust. Pop in the fridge for an hour.
Cut into 12 slices and serve.
This is so refreshing and delicious. Absolute winner in our house!
