The Ultimate Pancake Day Recipe (sans guilt!)

Pancake day is right around the corner! And I absolutely cannot wait. Pancakes for dinner, erm yes please!

My go-to pancake recipe was so dull and dry for years I would add a ton of sugar and lemon juice and still find it super unappetising, not filling and a bit of a token gesture for a meal. Until I found this little beauty. My world changed! Ok, little dramatic. But in all seriousness, we have these pancakes at least once a week. They are delicious.


1.5 cups oats

2 bananas

1 tbsp maple syrup

2 flax eggs (or regular eggs)

2 cups milk (we use oat or coconut milk)

1 tsp cinnamon

1 tsp maca powder


  • Blitz all the ingredients up in a blender
  • Ladle out a small portion at a time into a pancake pan
  • Roll it around until it thins out (this is important otherwise it'll be a bit gooey and thick)
  • Cook for 3 minutes each side
  • Serve with strawberries, coconut yoghurt, and a drizzle of peanut butter!
